While I lived at home I was quite spoiled, if I’m being honest. My mom made most of the meals, so I was always eating well. Now that I’m living on my own I have to cook my own meals, and I am quickly learning that cooking is not my strong suit. However, as humour for everyone I will showcase my cooking on my blog in a new series called “Cooking with Kayla”.
to suit My mom was nice enough to send me some of my favourite recipes from meals that she cooked while I was living at home. None of them are overly complicated and they are all vegetarian.
There’s always something satisfying about meal prepping and cooking on a Sunday. It gets the week started off on the right foot. That’s why I spent my Sunday afternoon making falafels and roasted potatoes for the week.
Falafels from Chow Vegan

The recipe I am using comes from Chow Vegan, and I have linked the recipe up above. I tweaked the recipe a little bit to suit me. Cilantro taste like soap (yes I am one of those people) so I didn’t put cilantro in them. The recipe calls for dried red pepper flakes, however I couldn’t find any in the supermarket in New Zealand, so I eliminated them from the recipe this time.
I know they don’t look that pretty, but that taste great!
Mashing the chickpeas with a fork didn’t mash them enough. Next time I make them I will put the chickpeas in a food processor so that they are more like a paste. Hopefully that will allow me to make them in more of a ball and not so much a lump.
